I've been absolutely obsessed with strawberries this summer, and this fun twist on a classic bruschetta is the perfect way to incorporate your summer strawberries into an easy appetizer. If you are equally obsessed with goat cheese like I am, this whipped goat cheese (or any goat cheese, for that matter) pairs nicely with the sweetness of the strawberries. Mozzarella, Bruschetta, or simply no cheese at all would also be delish in this simple recipe.
Recipe
For the Strawberries
1 small pack of strawberries, diced
2 tbsp olive oil
1/2 tsp honey
Salt
Lemon juice, to taste
Basil, cut into strips
1 clove garlic, minced
For the Whipped Goat Cheese
1 4oz package goat cheese
2 tbsp olive oil + more for desired creaminess
Fresh herbs (I used basil and oregano)
Lemon juice, to taste
1-2 tbsp water for desired creaminess

Baguette
Garlic clove
Olive oil
Balsamic glaze
Directions
Combine strawberries, olive oil, honey, salt, lemon juice, basil, and garlic in a bowl.
Combine goat cheese, olive oil, fresh herbs, lemon juice, and water in a blender. Blend until mixture is desired thickness.
Toast baguette and rub with garlic, drizzle with olive oil.
Top baguette with whipped goat cheese, strawberry mixture, extra basil, and balsamic glaze.
